My family and I have produced a Non-Profit Blues Festival for over 20 years. It has evolved into a fundraiser for youth education. The Delta Blues Festival, offers grants and scholarships to local students and schools.

I fell in love with the pizza trade in 1987 at the beginning of my professional career. Working closely with pizza operators everyday, motivated my love of the craft and gave me true inspiration. I built my own woodfired oven and work closely with the trade, constantly striving for a perfect pie.

I was inspired to build my woodfired oven by Alan Scott. He penned a book with Daniel Wing, called "The Bread Builders"

Bread baking runs in my family and my great uncle Gaetano Cardinale, inspired me to make Italian bread (pictured). I find bread making calming and soothing to my soul. I love to bake all styles of bread.

Pasta is the craft that brings me closer to my heritage than anything I create. While my Italian-American family primarily prepared  dried pasta, I treat my family and friends to much more. Along with dried, I prepare many fresh and stuffed pastas,. all with a focus to marry the right condimento to the right shape.
